Irish Soda Bread with Caraway & Raisins
Makes: 1 round loaf

Cook Time: 30 to 40 minutes
Ingredients
- 2 cups unsifted flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons softened butter
- 1 cup buttermilk
- 1/2 cup raisins
- 1 tablespoon caraway seeds
- 1 tablespoon butter, melted
Instructions
- Preheat oven to 375oF. Lightly grease a small cookie sheet.
- In a large bowl, sift flour, sugar, baking powder, soda and salt. Cut in softened butter with a pastry blender or fork until mixture looks like fine crumbs. Add raisin and caraway seed (if desired). Add buttermilk; mix with fork only until dry ingredients are moistened.
- Turn out on a lightly floured pastry cloth or board. Knead gently until smooth, about 1 minute. Shape into a ball. Place on prepared cookie sheet; flatten into 7 inch circle. Press knife into center of loaf almost to bottom. Repeat, at right angle, to divide loaf into quarters.
- Bake 30 to 40 minutes until loaf sounds hollow when tapped. Remove to wire rack to cool. Brush top with melted butter.
