The Best Corn Bread

Serves: 6-8

Prep Time: 15 minutes

Cook Time: 30 minutes

Ingredients

  • 1 1/2 cups yellow or white cornmeal
  • 1 cup flour
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 3/4 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 3 eggs
  • 3/4 cup butter, melted and cooled
  • 1 1/2 cup buttermilk
  • 1 cup frozen corn (thawed), optional
  • 1/2- to 1-cup Grated cheese (cheddar, Monterey Jack, Pepper Jack), optional
  • 1/4-cup roughly chopped pickled jalapeños, optional
  • 3-4 slices crisp bacon, crumbled

Instructions

  1. Mix dry ingredients.  
  2. Beat together the eggs, butter, and buttermilk and mix with dry ingredients.  Stir until smooth. 
  3.  Add optional ingredients, stir until blended.  Pour into a greased, hot 10” cast iron skillet.  
  4. Bake at 400o for 30 minutes.  Serve hot.
