The Best Corn Bread
Serves: 6-8

Cook Time: 30 minutes
Ingredients
- 1 1/2 cups yellow or white cornmeal
- 1 cup flour
- 1/3 cup sugar
- 1 teaspoon salt
- 3/4 tablespoon baking powder
- 1/2 teaspoon baking soda
- 3 eggs
- 3/4 cup butter, melted and cooled
- 1 1/2 cup buttermilk
- 1 cup frozen corn (thawed), optional
- 1/2- to 1-cup Grated cheese (cheddar, Monterey Jack, Pepper Jack), optional
- 1/4-cup roughly chopped pickled jalapeños, optional
- 3-4 slices crisp bacon, crumbled
Instructions
- Mix dry ingredients.
- Beat together the eggs, butter, and buttermilk and mix with dry ingredients. Stir until smooth.
- Add optional ingredients, stir until blended. Pour into a greased, hot 10” cast iron skillet.
- Bake at 400o for 30 minutes. Serve hot.
